Spicy Oyster Mushrooms with Cashews

INGREDIENTS
1/2 LB OYSTER MUSHROOMS
2 TBSP OIL
1/2 C CASHEWS
1 TBSP MINCED GARLIC
1/2 TBSP FRESH GINGER
1 MEDIUM CHOPPED ONION
1 TBSP VINEGAR
1 TBSP SOY SAUCE
1 TBSP CHILI SAUCE
1 TBSP TOMATO SAUCE
1 TSP CHILI FLAKES
1 TSP SUGAR
INSTRUCTIONS
- SHRED MUSHROOMS INTO SMALL PIECES.
- STIR-FRY MUSHROOMS IN OIL FOR 2-3 MINUTES ON MEDIUM HEAT.
- ADD CASHEWS AND STIR-FRY FOR 1 MINUTE.
- ADD GARLIC, GINGER AND ONION AND STIR-FRY FOR 1 MINUTE.
- STIR IN VINEGAR, SOY SAUCE, CHILI SAUCE, TOMATO SAUCE, CHILI        FLAKES AND SUGAR.
- SERVE IMMEDIATELY OVER RICE.
